Fried rice with egg
Ingredients
- 100g green beans
- 0.5Stückred bell pepper
- 200gSoybean sprouts
- 1Stückspring onion
- 2Eggs (Size M)
- 1ELlight soy sauce
- 2ELSambal oelek
- 3ELneutral plant oil
- 500gcooked rice from the day before
- 1TLTurmeric powder
- Salt & Pepper

Preparation:
1. Thoroughly wash the green beans, remove the ends, and blanch in plenty of boiling salted water for about 3–4 minutes. Then shock in ice-cold water and let drain well. After that, cut into pieces about 3 cm long.
2. Wash the bell peppers, remove the seeds, and cut into thin strips. Also wash the bean sprouts and let them drain. Clean the spring onion, wash and cut into fine rings. Whisk the eggs with soy sauce, sambal oelek, and a pinch of salt in a bowl.
3. Heat a tablespoon of oil in a wok. Add bell pepper strips, bean sprouts, spring onions, and beans and stir-fry everything for about 2 minutes. Then push the vegetables to the edge of the wok.
4. Add another tablespoon of oil to the center of the wok, pour in the egg mixture, and let it set while stirring. Then push it to the side as well.
5. Add the remaining oil to the center, then add the pre-cooked rice and fry for 1–2 minutes. Finally, mix all the ingredients well in the wok and season with turmeric, salt, and pepper.
