🟢 Spinach Dumplings 2.0 – Stylish Leftover Cuisine
Ingredients
- 200gstale bread (e.g., rolls, sourdough bread, ciabatta – variety appreciated)
- 150gfrozen spinach (defrosted) or fresh spinach
- 1Egg
- 50mlOat milk (or milk of your choice)
- 1small onion
- 1clove of garlic
- Salt, pepper, nutmeg
- 1ELButter or oil (for the pan)

🔪 Preparation
Bread cube base:
Cut the old bread into small cubes. Place in a bowl and pour the warm oat milk over it. Let it soak for 10 minutes.
Prepare spinach:
Finely chop onion & garlic, sauté until translucent in a pan. Add spinach, sauté briefly. Let cool and squeeze out well.
Mix everything:
Combine the spinach-onion mixture with the bread and egg. Season with salt, pepper, and nutmeg. Let it sit for a short while. If too moist: add some breadcrumbs.
Shape & cook dumplings:
Form 6–8 small dumplings from the mixture. Let them simmer in boiling salted water for about 15 minutes – do not boil vigorously!
Finish it:
Serve with melted butter and Parmesan – or for a trendy twist: top with vegan herb oil and crispy fried onions.
