Spicy Semolina Slices – Golden Brown, Savory & Simply Good

Spicy semolina slices are not only super easy to prepare, but also real all-rounders: as a side dish, main course, or snack.

Here’s how it’s done – step by step:

Get the milk going:
Measure the milk, pour it into a pot with a heavy bottom. Add salt and butter – this adds flavor and taste.

Mix dry ingredients:
Combine semolina and flour well in a bowl.

Now it gets creamy:
Warm the milk until it's lukewarm (do not boil!), remove the pot from the stove briefly and whisk in the semolina-flour mixture. No lumps allowed!

Boil & Stir:
Return to the stove and bring to a boil while stirring constantly. Then reduce the heat and continue stirring with a cooking spoon until the mixture pulls away from the bottom of the pot – this takes about 5–10 minutes.

Final touch:
Remove from the stove, let it swell briefly. Then stir in the egg and a pinch of nutmeg. Your basic dough is ready!

Option 1: Classic smooth

  • Rinse a wet cutting board or a plate with cold water.
  • Spread the semolina mixture about 1 cm thick using a wet knife and smooth it out.

  • Let the mixture cool down slightly, then with damp hands shape it into a thick roll.
  • Wrap in foil and refrigerate – perfect for meal prep!

Option 3: Beautiful Shape

  • Rinse a cold cake or freezer mold with water, fill with semolina mixture, smooth out, and let cool.
